The grapes come from vineyards located in the hills between Vita and Salemi, with exposure NW, terroir perfect for Catarratto, indigenous variety of the province of Trapani. The grapes are picked and selected in the box, during the first stage of maturation. The refermentation in the bottle according to Classical Method at low temperature, thanks to a long permanence on the yeasts for more than 20 months, makes this sparkling wine of great personality, exalting the varietal notes of the native grape.

The perlage is fine and persistent and the color is yellow with golden reflections. Net hints of yellow fruit, typical varietal notes with pleasant hints of yeast and bread crust. In the mouth it surprise for the freshness and the good structure and persistence. Pas Dosè, it is a wine for aperitifs, lunches and dinners based on fish.
