An ancient native grape variety from the western part of Sicily, organic Catarratto provides a pleasant freshness along with rich fruity sensations and citrus fruit aromas, which are typical of this grape variety. Fermentation takes place at a controlled temperature of 14°C, then the wine is refined in stainless steel tanks for a period of no less than 6 months. Before being sold on the market, the wine is left to rest in the bottle for another month.

The grapes are harvested in the second half of September.

Straw yellow in colour with greenish tinges, this wine offers rich fruity sensations and hints of citrus fruits, which are typical of this grape variety. It is fresh and embracing on the palate with a pleasant persistence. It is excellent paired with traditional Mediterranean first dishes, risottos and eggplant caponata.
